Maca is 100% natural Lepidium meyenii, is an annual plant which produces a radish-like root. The root of maca is typically dried and stored, and will easily keep for seven years. The plant is cultivated in the Junin plateau of Peru's Central Highlands, over 4000 meters (14000 feet) above sea level with ancient agricultural techniques.

Ingredients

  • 1¾ cup (1 can) evaporated milk
  • 1 apple, peeled, seeded and cut in pieces
  • 1 egg
  • 3 teaspoons sugar (more sugar may be added)
  • 2 teaspoons melted butter
  • ¾ cup sifted flour
  • 1 teaspoon baking powder
  • Cinnamon powder to taste
  • 6 teaspoons of Maca powder

Preparation

Blend the milk, apple, egg, sugar, melted butter and cinnamon until smooth. Add the flour and the baking powder and mix. Heat oil in a medium size skillet and pour ½ cup mixture for each pancake. Fry each until it is brown in both sides. Serve with butterscotch or jam.
